No Bake Paleo Cookies


 Surprise! Surprise! I was browsing around on Pinterest and found these delicious looking cookies!!  It looked easy enough and the ingredients seemed tasty.  I finally had the chance to try them out today and they are definitely just as good as they look! It was nice that they were "no-bake" because it has still been pretty darn hot lately and the last thing I wanted was to have my oven on in the middle of the afternoon. I was a little unsure about the olive oil in the cookies but I went ahead with following the recipe as it was the first time. Later I did read some of the comments on the original recipe that also suggested using half olive oil and half coconut oil and using other types of nuts, so maybe next time I will experiment with the ingredients a little more.




No Bake Paleo Cookies

Ingredients:
  • 1 cup coconut flakes
  • 1 cup chocolate chips
  • 1 cup chopped pecans
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1/3 cup olive oil
  • 1 Tablespoon cinnamon





Directions:



1. Heat chocolate chips, oil, honey, and almond butter in a sauce pan on medium heat. Melt the chocolate chips until they are a smooth consistency.  

 




2. Turn off the heat and add cinnamon, nuts and coconut. Be sure to coat everything in the chocolate.







3. Drop a spoonful on a parchment lined cookie sheet. Refrigerate for at least 30 minutes or until hardened.

  2. You could always try it with coconut oil or try half coconut oil and half olive oil. They were very rich and tasty following the recipe as is :)
    You could also try other ingredients to mix in as well...they are pretty forgiving!

  3. I just made these and messed with the recipe a bit. I added some salt and vanilla to the liquids. I subbed almonds for the pecans. I also did 1/3 olive oil, 1/3 coconut oil, and 1/3 no-soy earth balance. Then, at the very end, they looked a bit runny and messy, so I added a big handful of mini-marshmallows. (Totally NOT paleo, I have a wheat allergy that brought me here, and I am not that strict about the paleo thing)

    They are cooling right now. They look like rocky road and I want to put them on ice cream!

  4. I made these with my niece who has severe food allergies for Christmas. She loves them. I made another batch and subbed oats for coconut and left out the cinnamon to taste the chocolate more. This is such an easy recipe to do and tastes so good. Even make them for myself now with my dairy free chocolate and butter. Thank you for posting.

  6. What kind of chocolate chips do you use? Do you use dark or are there paleo chocolate chips out there? lol

  7. Jessica, I believe Enjoy Life chips are vegan but read the ingredients. You should be able to get them at your local health food store or natural food section of the supermarket (Wegmans carries them).

    I looked at the ingredients of most in the store and they contain sugar and milk.

  9. I just made these yummy cookies after searching "Paleo cookies" on Pinterest. I have a nut allergy so used pumpkin seeds instead of nuts and soy butter instead of PB. I cut down on the cinnamon a bit and really LOVED them!! Thank you!

  10. I used coconut oil instead of olive oil, agave instead of honey, sliced almonds instead of pecans. They are awesome!! Thank you for this great recipe:)

  11. I just made these and used Smucker's Natural PB with Honey and Nestle's Dark Chocolate Chips. I got 40 cookies and figured my sodium (since I have to watch that) and calories in each and they have 11 mg sodium and 127 calories. Yummy!!!!!!

  12. I'm going to make these, and if they're as good to eat as to look at, will make two more batches with which to treat my coworkers (they'll eat anything so long as its free). I know olive oil works well in many sweet things--I use it in my cakes and other baked goods, and it lends a rich, wonderful, subtle flavor that doesn't taste like olives (I bake unleavened bread with olive oil for the Days of Unleavened Bread (spring Holy Days), and everyone just loves it!).
    Anyhow, sounds and looks like a terrific recipe for this "Cookie Monster"!

  15. For anyone reading the comments, I made the following substitutions/adjustments:

    I didn't have chocolate chips on hand, so I used two squares of 100% cocoa bar, 1/2 cup of cocoa, and a heaping 1/3 cup coconut oil. I used peanut butter instead of almond butter, and a mixture of almonds and sunflower seeds.

    It's pretty different than the original recipe, just working with what I had. I was looking for a no bake cookie withOUT refined sugar. If you use chocolate chips it will most likely have refined sugar, unless you buy a special brand.

    They froze quickly and taste delicious. It does get melty if you leave them out too long, so I am just storing in freezer and eating right away.
